Chocolate desserts split by where the chocolate comes from, and the split decides the numbers. Cocoa powder is the chocolate flavor with most of the cocoa butter already pressed out of it, so a cocoa-based dessert can be genuinely small: the chocolate frozen yogurt bark here is 35 calories a piece. Real chocolate is cocoa butter and sugar, so it costs what it costs. The dark chocolate almond bark is 195 calories a piece, and the toasted almonds are most of the difference.

Cocoa is not simply the better answer. It cannot melt and set, so anything that needs a shell or a snap needs the real thing, and cocoa on its own is bitter, which brings the sweetener question straight back.

What we do is say which one a recipe uses and print the fat beside the calories. Fat is where a chocolate dessert actually lives, and it is the line most recipes quietly leave off.
