Molten Chocolate Mug Cake

This is a five-minute fix when the craving hits and I do not want to bake anything or dirty more than one dish. The trick is the little square of chocolate buried in the middle, it melts into a molten center while the rest of the cake sets up around it.

The whole thing lives or dies on timing. Pull it out while the center still looks a little glossy and underdone, because the residual heat from the mug keeps cooking it for another minute after it comes out of the microwave, and that's exactly where the molten center comes from. It's built to be eaten in one sitting straight from the mug, not saved for later.

Molten Chocolate Mug Cake

A five-minute single-serve mug cake with a genuine molten center from one square of dark chocolate buried in the batter.

Ingredients

  • 3 tbsp (24g) oat flour
  • 1.5 tbsp (7g) unsweetened cocoa powder
  • 2 tbsp granulated allulose or monk fruit sweetener
  • 1/4 tsp baking powder
  • Pinch of salt
  • 2 tbsp (30g) unsweetened applesauce
  • 2 tbsp (30ml) unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1 small square (about 1 tsp / 5g) sugar-free dark chocolate

Instructions

  1. In a microwave-safe mug (at least 12 oz), whisk together the oat flour, cocoa powder, sweetener, baking powder, and salt.
  2. Add the applesauce, almond milk, and vanilla, and stir until smooth with no dry pockets left.
  3. Push the square of dark chocolate into the center of the batter until it is just covered.
  4. Microwave on high for 60 to 75 seconds in a 1000-watt microwave (add 15 to 20 seconds for a lower-wattage one), until the top looks mostly set but the center is still slightly glossy.
  5. Let it sit for 1 minute before eating. Do not overcook, the residual heat finishes the center and that is where the molten part comes from.
  6. Eat straight from the mug with a spoon while the center is still warm.

Tips & swaps

  • Overcooking is the only real way to mess this up, pull it while the center still looks slightly underdone.
  • Microwave wattage varies a lot. Start checking at 45 seconds the first time you make it.
  • Swap the square of dark chocolate for a few sugar-free chocolate chips if that is what you have.
  • This does not reheat well as leftovers, it is built to be eaten fresh in one sitting.
