Peanut Butter Protein Balls

I wanted a peanut butter protein ball that actually tasted like peanut butter without the fat that comes with a real spoonful, and PB2 turned out to be the answer. These hold together firm enough to toss in a bag and forget about until you need them.

They travel better than most no-bake bites, no melting, no falling apart in a gym bag by the time you get there. I roll a double batch on Sunday and they cover snacks for most of the week.

Peanut Butter Protein Balls

Ingredients

  • 3/4 cup old-fashioned oats
  • 1/2 cup PB2 (powdered peanut butter)
  • 1/2 cup (about 1 1/2 scoops) vanilla or chocolate protein powder
  • 2 tbsp honey or maple syrup
  • 1/4 cup milk of choice, as needed
  • 3 tbsp mini chocolate chips
  • Pinch of salt

Instructions

  1. In a large bowl, whisk the PB2 with the milk until it forms a smooth, thick peanut butter paste. Let it sit for 1 minute to fully hydrate.
  2. Add the oats, protein powder, honey, and salt. Mix with a spatula or your hands until a thick, slightly sticky dough forms, adding an extra teaspoon of milk if it feels too dry to hold together.
  3. Fold in the mini chocolate chips.
  4. Roll the dough into 10 balls, about 1 tablespoon each.
  5. Chill for 20 minutes to firm up before eating. 2 balls make one serving.

Tips & swaps

  • PB2 needs a minute to hydrate, let the mixed dough sit for a minute after adding the milk before deciding it needs more liquid, it thickens as it sits.
  • These come out firmer than a typical energy bite on purpose, that is what holds up with this much protein powder in the mix. If you want them softer, add an extra teaspoon of milk.
  • Swap the mini chocolate chips for chopped roasted peanuts if you want more crunch and less sugar.
  • Store in an airtight container in the fridge up to 1 week, or freeze up to 3 months.
