Brownie Batter Bites

This is the closest I have gotten to actual brownie batter without turning on the oven or worrying about raw eggs. Cocoa powder and dates carry almost the whole thing, so each bite lands under 60 calories and still tastes like something you are not supposed to have before dinner.

The dates need to be soft, if yours feel dry, soak them in warm water for ten minutes first or the food processor will fight you the whole way. Roll them right out of the processor while the mixture is still a little warm, it holds together easier.

Brownie Batter Bites

Ingredients

  • 1/3 cup rolled oats
  • 1/2 cup pitted medjool dates (about 5 dates)
  • 3 tbsp unsweetened cocoa powder, plus more for rolling
  • 2 tbsp unsweetened applesauce
  • 1 tbsp allulose, optional
  • Pinch of salt
  • 1 to 2 tsp water, if needed

Instructions

  1. Add the oats to a food processor and pulse a few times to break them down slightly, you do not need a fine flour.
  2. Add the pitted dates, cocoa powder, applesauce, allulose, and salt. Process until the mixture clumps together into a sticky, thick dough, scraping down the sides as needed.
  3. If the dough feels too dry to hold together, add the water 1 teaspoon at a time and pulse again.
  4. Roll the dough into 10 balls, about 1 tablespoon each. Roll each ball in the extra cocoa powder to coat.
  5. Chill for 20 minutes to firm up before eating.

Tips & swaps

  • Soft dates are non-negotiable here too, little fat elsewhere means dry dates will not bind, soak them in warm water 10 minutes if they feel stiff.
  • These are noticeably softer and more fudgy than a nut-based energy bite, that is the cocoa and applesauce talking. Keep them chilled or they get a little too soft to hold their shape at room temperature.
  • Roll them in extra cocoa powder instead of coconut for a true brownie batter look and a slightly bitter edge that balances the sweetness.
  • Store in the fridge up to 10 days, or freeze up to 3 months.
