Chocolate Protein Fudge

This is fudge in the truest sense, dense, rich, and a little decadent, except it's built on nut butter and protein powder instead of a pound of butter and sugar. No candy thermometer, no stove, just stir and let the fridge do the rest.

It satisfies a chocolate craving hard, and because it's this dense, a couple of small squares actually does the job. I keep a pan of this in the freezer more often than I'd like to admit.

Chocolate Protein Fudge

Dense chocolate protein fudge built on nut butter and protein powder instead of a pound of butter and sugar, no candy thermometer needed.

Ingredients

  • 1/2 cup natural peanut butter or almond butter
  • 3 tablespoons coconut oil, melted
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup chocolate protein powder
  • 2 to 3 tablespoons allulose or monk fruit sweetener, to taste
  • pinch of salt
  • 2 to 3 tablespoons unsweetened almond milk, as needed

Instructions

  1. Line a small loaf pan or 8x8 inch dish with parchment paper.
  2. Stir the nut butter and melted coconut oil together in a bowl until smooth.
  3. Whisk in the cocoa powder, protein powder, sweetener, and salt.
  4. Add the almond milk a tablespoon at a time, stirring after each addition, until the mixture comes together into a thick, spreadable fudge, it should hold its shape but still be soft enough to press flat.
  5. Press the mixture evenly into the prepared pan and smooth the top with the back of a spoon.
  6. Chill in the refrigerator for at least 2 hours, or until firm.
  7. Lift out using the parchment and cut into 12 squares.
