Cookies-and-Cream Protein Bark

This is the bark I built specifically to make cookies-and-cream feel like it belongs in a high-protein lineup. The protein powder folds right into the yogurt base, so it's not an afterthought, it's actually doing real work toward your protein for the day.

The crushed cookies give it that classic cookies-and-cream crunch, and the chocolate drizzle on top ties the whole thing together. Grab three pieces at a time and it eats like a real snack, not a bite.

Cookies-and-Cream Protein Bark

Ingredients

  • 1 1/2 cups plain Greek yogurt (2% or full-fat)
  • 1 1/2 scoops (about 45g) vanilla protein powder
  • 2 tablespoons allulose or monk fruit sweetener
  • 1 teaspoon vanilla extract
  • 4 sugar-free chocolate sandwich cookies, roughly crushed
  • 1 oz sugar-free dark or white chocolate, melted

Instructions

  1. Line a baking sheet with parchment paper.
  2. Whisk the yogurt, protein powder, sweetener, and vanilla together until completely smooth, this will thicken up as the protein powder absorbs, whisk until no dry streaks remain.
  3. Spread the mixture evenly onto the parchment, about 1/4 inch thick.
  4. Scatter the crushed cookies evenly over the top and press in lightly.
  5. Drizzle the melted chocolate over everything.
  6. Freeze for at least 3 hours, or until solid all the way through.
  7. Break into pieces and serve straight from the freezer.
