Homemade Sugar-Free Vanilla Marshmallows

Marshmallows are one of those things I assumed would be impossible to make sugar-free until I actually tried it, and the honest answer is it comes down entirely to which sweetener you use. Erythritol, the sweetener I reach for in most of my baking, crystallizes back into little sugar-like crystals as it cools. In a cookie or a cake you'd never notice. In a marshmallow, which is basically whipped syrup and gelatin, it turns the whole batch grainy and firm instead of soft and pillowy. Allulose doesn't do that. It stays dissolved the way real sugar syrup does, which is why it's the one that actually works here.

Beyond the sweetener swap, this is a real marshmallow recipe, bloomed gelatin, a hot syrup cooked to soft-ball stage, and a long whip until it turns into that glossy, cloud-like texture. It takes a little attention (a candy thermometer earns its keep here) but nothing about the process is complicated, it's just a few steps that each need to happen in order.

Give yourself the full setting time before you cut into these. I know the smell of vanilla marshmallow sitting on the counter is a lot to resist, but they need those hours to firm up enough to hold their shape when you slice them.

Homemade Sugar-Free Vanilla Marshmallows

Real homemade sugar-free vanilla marshmallows made with bloomed gelatin and an allulose syrup, soft and pillowy with no added sugar.

Ingredients

  • 3 tablespoons unflavored gelatin
  • 1 cup cold water, divided
  • 1 cup allulose (or a BochaSweet and allulose blend)
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 tablespoons arrowroot starch, for dusting
  • 2 tablespoons powdered allulose, for dusting

Instructions

  1. Line a 9x9 inch pan with parchment paper, leaving overhang on two sides. Mix the arrowroot starch and powdered allulose together in a small bowl, this is your dusting mix, and dust the parchment generously with it.
  2. In the bowl of a stand mixer, sprinkle the gelatin over 1/2 cup of the cold water. Let it sit and bloom for 10 minutes while you make the syrup.
  3. In a small saucepan, combine the allulose, the remaining 1/2 cup water, and the salt. Bring to a boil over medium heat, then reduce to a steady simmer.
  4. Cook the syrup, without stirring, until it reaches 240°F on a candy thermometer, the soft-ball stage. This usually takes 8 to 10 minutes.
  5. With the mixer fitted with the whisk attachment running on low, slowly and carefully pour the hot syrup into the bloomed gelatin in a thin stream. Keep your hands clear of the beater, the syrup is very hot.
  6. Once all the syrup is in, turn the mixer up to high speed and whip for 10 to 12 minutes, until the mixture is thick, glossy white, and has roughly tripled in volume. It should hold a soft peak and feel warm but not hot.
  7. Add the vanilla extract in the last minute of whipping.
  8. Pour the mixture into the prepared pan and smooth the top with a spatula lightly coated in the dusting mix. Dust the top generously with more of the mix.
  9. Let the marshmallows set uncovered at room temperature for at least 4 hours, or overnight.
  10. Turn the marshmallow slab out onto a cutting board dusted with more of the coating mix. Cut into squares with a pizza cutter or sharp knife, dusting the blade as you go so it doesn't stick.
  11. Toss the cut marshmallows in the remaining dusting mix so all the sides are coated and they don't stick together.

Tips & swaps

  • The sweetener choice actually matters here, more than in most recipes on this site. Erythritol crystallizes as it cools, which turns marshmallows grainy and keeps them from staying soft, allulose behaves much closer to real sugar, it stays dissolved, so the marshmallows come out properly soft and pillowy. A BochaSweet and allulose blend works the same way.
  • A candy thermometer isn't optional here, the syrup needs to actually hit soft-ball stage (240°F) for the marshmallows to set up right. Going by time alone is too unreliable.
  • These are slightly softer and a touch less shelf-stable than sugar marshmallows, since allulose holds onto a little more moisture. Store them in an airtight container at room temperature and they're best within about a week.
  • Want to melt them for hot cocoa or a treat? A light dusting of extra powdered allulose on the outside helps keep them from sticking to each other, even after they've been sitting a few days.
  • If you don't have a stand mixer, a hand mixer works, it just takes a bit more arm patience during the whipping stage.
