Pumpkin Protein Muffins

Pumpkin puree brings so much natural moisture that these muffins stay soft even with a big scoop of protein powder in the mix, which is usually the thing that dries protein baking out.

The pumpkin pie spice makes the whole kitchen smell like fall, and each muffin carries a real amount of protein, this is the one I make on repeat every October and just keep going through winter.

Ingredients

  • 1 cup oat flour
  • 3/4 cup vanilla protein powder
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1 cup pumpkin puree
  • 2 eggs
  • 1/4 cup unsweetened applesauce
  • 1/3 cup allulose or monk fruit sweetener
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350F and line a muffin tin with 10 liners.
  2. In a bowl, whisk together the oat flour, protein powder, pumpkin pie spice, baking powder, baking soda, and salt.
  3. In another bowl, whisk the pumpkin puree, eggs, applesauce, sweetener, and vanilla until smooth.
  4. Pour the wet ingredients into the dry and stir gently just until combined, don't overmix, protein powder batters can turn dense if overworked.
  5. Divide the batter evenly among the 10 muffin cups.
  6. Bake for 18 to 20 minutes, until the tops spring back when touched lightly.
  7. Let cool in the pan for 10 minutes before removing.

Tips & swaps

  • Make sure you're using plain pumpkin puree, not pumpkin pie filling, which has added sugar.
