No-Bake Granola Bars

This is the granola bar I actually want to hand someone and let them read the label, oats, honey, nut butter, dried fruit, nothing that needs an explanation. No oven, no fuss, just a pot, a bowl, and a good firm press into the pan.

The honey is doing real work here, not just sweetening but binding everything together once it cools, so do not skip pressing it in hard before it sets. A firm press is the difference between a bar that holds together and one that crumbles the second you pick it up.

No-Bake Granola Bars

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup natural peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 2 tbsp coconut oil
  • 1/4 cup chopped almonds or walnuts
  • 1/4 cup dried cranberries or chopped pitted dates
  • 1/4 cup mini chocolate chips
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  1. Line an 8x8 inch pan with parchment paper, leaving an overhang on two sides.
  2. In a large bowl, combine the oats, chopped almonds, and dried cranberries.
  3. In a small saucepan over low heat, warm the peanut butter, honey, and coconut oil together, stirring often, just until smooth and pourable, about 3 to 4 minutes. It should be warm and loose, not bubbling or boiling.
  4. Remove from heat and stir in the vanilla, cinnamon, and salt.
  5. Pour the warm mixture over the oats and dried fruit and stir thoroughly, making sure every bit of oat gets coated. This takes a minute or two of real mixing, an undermixed batch will not hold together once cut.
  6. Let the mixture cool for about 5 minutes, just enough that it will not fully melt the chocolate chips, then fold in the chocolate chips.
  7. Transfer to the prepared pan. Using the back of a greased measuring cup or spatula, press the mixture down firmly and evenly, really pressing into the corners. Firm, even pressure is what holds these together without any baking, a loosely packed bar will crumble apart.
  8. Refrigerate for at least 2 hours, or until fully firm, before lifting out with the parchment overhang and slicing into 12 bars.

Tips & swaps

  • The pressing step matters more than any ingredient here, use real pressure and take your time, it is the difference between a bar that holds together and one that falls apart the second you pick it up.
  • Swap the dried cranberries for raisins, chopped dried apricots, or chopped dates depending on what you like.
  • If you want these nut-free, sunflower seed butter and pepitas work well in place of the peanut butter and almonds.
  • Store in the fridge in an airtight container for up to 2 weeks, they hold their shape best cold. They will soften at room temperature within an hour or two.
