These are the thing I make on a Sunday when I want a stash of something sweet in the fridge for the week without a lot of effort. No oven, no mixer, just a bowl and your hands.
The base is shredded coconut and almond butter, which gives you that chewy, slightly dense texture you want from an energy bite. Cocoa powder turns it chocolatey, chia seeds add a little fiber and help everything bind, and a sugar-free sweetener rounds out the sweetness without any added sugar.
They're not exactly light (nuts and coconut are calorie-dense, no way around that), but they're satisfying in a way a lot of "diet" snacks aren't, so one actually feels like enough.
