Ingredients

  • 1 cup oat flour
  • 1/2 cup almond flour
  • 1 tablespoon poppy seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 2 eggs
  • 1/2 cup plain nonfat Greek yogurt
  • 1/3 cup unsweetened almond milk
  • 1/3 cup allulose or monk fruit sweetener
  • zest of 2 lemons
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350F and line a muffin tin with 10 liners.
  2. In a bowl, whisk together the oat flour, almond flour, poppy seeds, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, Greek yogurt, almond milk, sweetener, lemon zest, lemon juice, and vanilla until smooth.
  4. Pour the wet ingredients into the dry and stir just until combined, don't overmix.
  5. Divide the batter evenly among the 10 muffin cups.
  6. Bake for 16 to 18 minutes, until the tops are lightly golden and a toothpick comes out clean.
  7. Let cool in the pan for 10 minutes before removing.

Tips & swaps

  • Zest the lemons before juicing them, it's much easier that way.
