Blondie for One

Some nights I want dessert but not a full pan of blondies staring at me from the counter for a week, so I make one in a ramekin and it's done before the microwave even finishes beeping.

The oat flour and PB2 keep it from tasting like a science experiment, it actually eats like a warm blondie. Start checking it at 45 seconds, a batch that runs even 15 seconds too long turns rubbery fast.

Blondie for One

A one-bowl, one-minute microwave blondie for when you want something warm and gooey but not a whole pan of temptation sitting on the counter.

Ingredients

  • 3 tbsp oat flour
  • 1 tbsp PB2 (powdered peanut butter)
  • 1 tbsp allulose or coconut sugar
  • 1/4 tsp baking powder
  • Pinch of salt
  • 1 tbsp unsweetened applesauce
  • 1 tbsp milk of choice
  • 1/4 tsp vanilla extract
  • 1 tsp mini chocolate chips

Instructions

  1. In a small microwave-safe ramekin or mug, whisk the oat flour, PB2, allulose, baking powder, and salt together.
  2. Add the applesauce, milk, and vanilla extract. Stir until you have a thick, smooth batter with no dry streaks.
  3. Fold in the mini chocolate chips.
  4. Microwave on high for 45 to 60 seconds, until the top looks just set and no longer wet. It will firm up more as it cools for a minute.
  5. Let it sit for 1 to 2 minutes before eating, straight from the ramekin.

Tips & swaps

  • A small ramekin or oven-safe mug works best, a wide bowl spreads the batter too thin and it overcooks in seconds.
  • Start checking at 45 seconds. Microwaves vary a lot and a blondie that goes even 15 seconds too long turns rubbery.
  • PB2 keeps the peanut butter flavor without the fat of the real thing, but a scant teaspoon of real peanut butter stirred in at the end works too if that is what you have.
  • This does not keep well, it is built to be eaten right away while it is still warm.
