This started as an attempt to make a classic butter toffee without the sugar crash, and allulose turned out to be the missing piece, it browns and thickens in the pan almost exactly like sugar does, so the process feels like making real toffee.
It comes out more soft and chewy than glass-hard, which honestly makes it easier to eat. The toasted almonds and flaky salt on top make it taste like something from a candy shop.
