Edible Protein Cookie Dough

I have wanted to eat cookie dough straight out of the bowl since I was a kid, and this version finally lets me do it without worrying about raw eggs or raw flour, plus it actually has enough protein to justify calling it a snack.

Oat flour is the reason this actually works, it's naturally safe to eat raw, unlike regular flour, so there's nothing here that needs baking or a microwave step first. The protein powder brand you use changes how much milk it needs to come together, so I always add it a tablespoon at a time until the texture looks like real dough, soft but not sticky.

Edible Protein Cookie Dough

Real cookie dough you can eat straight from the bowl, no raw eggs and no raw wheat flour, just protein powder, oats, and enough peanut butter to make it worth it.

Ingredients

  • 1/2 cup oat flour
  • 2 scoops (about 60g) vanilla whey or casein protein powder
  • 2 tbsp plain Greek yogurt
  • 2 tbsp natural peanut butter
  • 1 1/2 tbsp maple syrup
  • 3 to 4 tbsp milk of choice, as needed
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 3 tbsp mini chocolate chips

Instructions

  1. In a food processor or by hand, combine the oat flour, protein powder, Greek yogurt, peanut butter, maple syrup, vanilla extract, and salt.
  2. Add the milk 1 tablespoon at a time, mixing after each addition, until the dough comes together and looks like real cookie dough, soft but not sticky to the touch.
  3. Fold in the mini chocolate chips.
  4. Eat right away with a spoon, or chill for 20 minutes if you want it firmer, and scoop into small bites.

Tips & swaps

  • Oat flour is naturally safe to eat raw, unlike regular wheat flour, so there is no need to bake or microwave it first. If you swap in all-purpose flour for any reason, spread it on a plate and microwave 1 minute to kill off any bacteria before using it.
  • There are no eggs in this dough on purpose, they are what makes regular cookie dough risky raw. Greek yogurt and milk do the binding here instead.
  • If your protein powder is on the thick or chalky side, add the extra milk a teaspoon at a time. Different brands absorb liquid very differently.
  • Store covered in the fridge up to 5 days. It firms up when cold, let it sit out 5 minutes before eating if you want it soft.
