Ingredients

  • 1/2 cup unsweetened almond milk, plus more as needed
  • 1 scoop vanilla protein powder
  • 1/2 frozen banana, sliced
  • a handful of ice cubes
  • 1 tablespoon almond flour
  • 1 teaspoon nut butter
  • 1 teaspoon allulose or monk fruit sweetener
  • pinch of salt
  • 1 tablespoon mini chocolate chips

Instructions

  1. In a small bowl, stir together the almond flour, nut butter, allulose, and a pinch of salt with your fingers until it forms a small ball of dough. Fold in the mini chocolate chips and break the dough into small bits. Set aside.
  2. Add the almond milk, protein powder, frozen banana, and ice cubes to a blender.
  3. Blend until thick and smooth, like soft serve, adding a splash more almond milk if it won't move.
  4. Pour into a bowl and fold in the cookie dough bits by hand.
  5. Eat immediately.
