Banana Muffin for One

One mashed banana and a mug is all it takes for a warm, single-serve muffin in under 10 minutes.

Ingredients

  • 1 small ripe banana, mashed
  • 1 egg
  • 3 tablespoons oat flour
  • 1/4 teaspoon baking powder
  • pinch of cinnamon
  • pinch of salt
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon honey or maple syrup, optional

Instructions

  1. Mash the banana well in a large mug or small microwave-safe ramekin.
  2. Whisk in the egg until combined.
  3. Stir in the oat flour, baking powder, cinnamon, salt, vanilla, and honey if using, just until no dry streaks remain.
  4. Microwave on high for 90 seconds to 2 minutes, until the top is set and a toothpick comes out clean. Microwave power varies, check at 90 seconds and add time in 15-second bursts if needed.
  5. Let it cool for 2 to 3 minutes before eating, it's very hot straight out of the microwave.

Tips & swaps

  • For a baked version instead, pour the batter into a greased ramekin and bake at 350F for 15 to 18 minutes.
