Peanut Butter Chocolate Bark

This is my sweet-and-salty answer to a peanut butter cup, minus the calorie load. PB2 gives the swirl real peanut butter flavor for a fraction of the fat, and the chocolate drizzle on top means you still get that classic combination in every bite.

The yogurt base keeps the whole thing light and a little tangy, which cuts the sweetness just enough that it doesn't feel like you're eating candy, even though it kind of tastes like it.

Peanut Butter Chocolate Bark

A yogurt base swirled with powdered peanut butter and finished with a sugar-free chocolate drizzle, my answer to a peanut butter cup at a fraction of the calories.

Ingredients

  • 2 cups plain nonfat Greek yogurt
  • 2 tablespoons allulose or monk fruit sweetener
  • 1 teaspoon vanilla extract
  • 3 tablespoons PB2 (powdered peanut butter)
  • 2 tablespoons water
  • 1 oz sugar-free dark chocolate, melted
  • pinch of flaky sea salt

Instructions

  1. Line a baking sheet with parchment paper.
  2. Whisk the yogurt, sweetener, and vanilla together in a bowl until smooth. Spread evenly onto the parchment, about 1/4 inch thick.
  3. In a small bowl, whisk the PB2 and water together into a thick, smooth paste.
  4. Dollop the peanut butter paste over the yogurt and swirl it in with a knife, don't fully mix it in, you want visible ribbons.
  5. Freeze for 1 hour to firm up slightly.
  6. Drizzle the melted chocolate over the top and sprinkle with sea salt.
  7. Return to the freezer for at least 2 more hours, or until solid all the way through.
  8. Break into pieces and serve straight from the freezer.

Tips & swaps

  • PB2 keeps this much lighter than swirling in regular peanut butter, which would roughly triple the fat and calories.
  • Any sugar-free chocolate works for the drizzle, dark tends to have the fewest carbs.
  • The flaky salt on top isn't optional in my opinion, it's what makes this taste like a real candy bar.
