Birthday Cake Protein Cake Balls

These are what I make when I want cake batter but do not want to turn on the oven. No baking, one bowl, and a real scoop of protein powder in every ball instead of just a spoonful for the label.

If the dough won't hold together, it usually just needs another teaspoon of Greek yogurt rather than more milk, the yogurt is what actually binds everything without thinning it out. They keep well in the fridge for about a week, so I usually roll the whole batch at once and have a stash ready whenever the craving for cake shows up without the oven.

Birthday Cake Protein Cake Balls

No-bake birthday cake dough rolled around a real scoop of protein powder, dipped, and ready before the oven would have even preheated.

Ingredients

  • 3/4 cup (75g) vanilla or cake batter flavored protein powder (about 2.5 scoops)
  • 1/4 cup (63g) plain nonfat Greek yogurt
  • 1/4 cup (30g) almond flour
  • 2 tbsp (30g) rainbow sprinkles, plus more for topping
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 1 to 2 tbsp milk of choice, as needed to bind
  • 3 oz (85g) sugar-free white chocolate or white chocolate melting wafers, for coating

Instructions

  1. In a medium bowl, stir together the protein powder, Greek yogurt, almond flour, sprinkles, vanilla, and almond extract until a thick dough forms. Add milk a teaspoon at a time if the dough is too dry to hold together.
  2. Cover and chill the dough for 30 minutes, this makes it much easier to roll.
  3. Scoop and roll into 10 balls, about 1 tablespoon each. Place on a parchment-lined plate and freeze for 15 minutes while you melt the coating.
  4. Melt the sugar-free white chocolate in the microwave in 20-second bursts, stirring between each, until smooth.
  5. Dip each ball in the melted coating using a fork, letting the excess drip off, and set back on the parchment. Top with a few extra sprinkles before the coating sets.
  6. Chill until firm, about 15 minutes, then store in the fridge.

Tips & swaps

  • Cake batter flavored protein powder makes these taste closest to actual birthday cake, but plain vanilla works fine too.
