Coconut Almond Energy Bites

These live in my fridge more consistently than almost anything else I make. Dates and almonds do all the real work, no baking, no protein powder, just a snack that tastes like it should cost four dollars at a gas station and doesn't.

Soft, fresh medjool dates matter more than any other ingredient here. If yours feel dry or stiff, soak them in warm water for 10 minutes first, or the dough won't come together in the food processor.

Coconut Almond Energy Bites

Dense, chewy no-bake bites built on dates and almonds, the kind of snack that actually keeps you full instead of just being sweet.

Ingredients

  • 3/4 cup raw almonds
  • 1 cup pitted medjool dates (about 8 to 9 dates)
  • 1/2 cup unsweetened shredded coconut, divided
  • 2 tbsp almond butter
  • 1/4 tsp cinnamon
  • Pinch of salt
  • 1 to 2 tsp water, if needed

Instructions

  1. Add the almonds to a food processor and pulse until they form a coarse, sandy crumb, not a butter.
  2. Add the pitted dates, 1/4 cup of the shredded coconut, almond butter, cinnamon, and salt. Process until the mixture clumps together and looks like a sticky, coarse dough, scraping down the sides as needed.
  3. If the dough feels too dry to hold together, add the water 1 teaspoon at a time and pulse again.
  4. Roll the dough into 14 balls, about 1 tablespoon each. Roll each ball in the remaining shredded coconut to coat.
  5. Chill for 20 to 30 minutes to firm up before eating.
