Carrot Cake Bites

I make these when I want carrot cake but not the cream cheese frosting hangover that comes with a real slice. Actual grated carrot and walnuts do the work here, so it tastes like the cake, just smaller and a lot more honest.

Squeezing the grated carrot dry before it goes in the food processor is the one step that actually matters, skip it and the dough turns too wet to roll into bites.

Carrot Cake Bites

Ingredients

  • 3/4 cup walnuts
  • 1 cup pitted medjool dates (about 8 to 9 dates)
  • 1/2 cup finely grated carrot (about 1 medium carrot), squeezed of excess moisture
  • 1/2 cup unsweetened shredded coconut, divided
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • Pinch of nutmeg
  • Pinch of salt
  • 1/2 tsp vanilla extract

Instructions

  1. Add the walnuts to a food processor and pulse until they form a coarse crumb.
  2. Add the pitted dates and process until the mixture starts to clump together into a sticky, thick paste.
  3. Add the grated carrot, 1/4 cup of the shredded coconut, cinnamon, ginger, nutmeg, salt, and vanilla extract. Pulse until fully combined into a cohesive dough, scraping down the sides as needed.
  4. Roll the dough into 14 balls, about 1 tablespoon each. Roll each ball in the remaining shredded coconut to coat.
  5. Chill for 30 minutes to firm up before eating.

Tips & swaps

  • Squeeze the grated carrot in a paper towel before adding it, extra moisture will make the dough too wet to roll.
  • Soft medjool dates are what hold everything together, if yours feel dry, soak in warm water 10 minutes and pat dry first.
